Mezcal Alipus - San Andres. Mezcal is distilled from blue agave, a succulent like Aloe Vera rather than a cactus . All Tequila is a mezcal, but tequila has had the agave solids removed before distillation. Artisan Mezcal distillers keep the agave solids in the pulque mash so they tend to be al ittle cloudy and have more character than traditional Tequila. Alipus Mezcal is made in Oaxaca.
